The marshmallow plant has been used for many centuries by people all over the world. Mixed with honey it was used as a cough remedy in ancient Egypt and in Medieval Europe. The naturally-occurring pectin and mucilage in the root are what made marshmallows as we know thempossible, as French confectioners found out when they combined marshmallow extract with sugar and egg whites.

The first commercial marshmallows are what enabled the campfire treat s’mores to become a sticky reality. The first recipe for s’mores was published in Tramping and Trailing with the Girl Scouts in 1927, though some sources point to the 1910s Moonpies and Mallomars as inspirations for this favorite childhood treat. Any way you look at it, the combination of marshmallows, graham crackers and chocolate is sheer genius!
