This recipe first appeared in a letter-to-the-editor in the London Monthly Magazine in 1799. In this letter, the author explains the benefits of making a cake with potash, instead of yeast! The result is a light, fluffy cake that could be made in minutes (and was also beneficial since yeast wasn’t always readily available). In the following video from Jas.
