If you make sure to refrigerate your potatoes right after cooking, you will avoid any risk of bacteria forming. However, if you are like most people who cook their meal and let the dishes sit out on the counter or on the table “just in case” anyone wants a second helping, you could be at risk! According to a registered dietician, Brigitte Zeitlin, potatoes that cool down to room temperature can promote the growth of botulism, a rare bacteria that can’t be killed with a zap in the microwave.
